Asparagus and Broccoli Chicken Salad
I have to say that I was a pretty picky and plain eater when it came to foods but after being laid off and finding Pinterest; that has changed me in more ways then I could ever think and on top of that I quite smoking back in March so things taste way different then they use to.
I have created a recipe that includes a lot of greens.
1 lb of asparagus
1 head of broccoli
Hand full of chives
4-5 green onions
1 small zucchini ( cut how you want )
1 pkg of slices mushrooms ( your choice)
2-4 chicken breasts sliced thin of into pcs
5-6 garlic cloves ( I love garlic so that is why there is so much )
2 tsp of red pepper flakes ( optional)
2 tsp ground coriander seed
1 cup low sodium chicken broth ( you may need more )
Half bottle white cooking wine or vermouth cooking wine
2 tablespoons red wine vinegar
1 cup brown rice ( optional)
I cook my chicken in white cooking wine but if you don't have any or prefer to cook with oil then that work's just the same. While your chicken is cooking go ahead and start prepping all your vegetables. Once chicken is done remove from pan an add your asparagus and broccoli as they take the longest to become tender. Add in the chicken broth and white wine and seasonings and let cook for about 5-9 minutes. Now add in the remaining vegetables and chicken. Cook until broth is almost gone and then add in the red wine vinegar and cook for 5 minutes and serve either by itself or over a bed of brown rice.
